Main Courses
In my experience having a good collection of main courses you can use for dinners and lunches is a great way to make sure you get all the calories and nutrients you need every day, and avoid depending too much on food on the run and snacking to get the nutrition you need.
I usually make enough of each recipe for a serving at dinner and another for lunch the following day. This is not possible or practical for all recipes but works great for things like soups and one pot meals.
